Ingredients

1 tbsp rapeseed or sunflower oil
1⁄2 large white onion, diced
1 garlic clove, diced
1⁄2 red pepper, diced
3 tomatoes, diced
1⁄4 cup tomato sauce or passata
1 tbsp tomato paste
1⁄2 tsp chilli powder
1 tsp cumin
1 tsp paprika
Salt and pepper
1 egg
1 tsp basil
Handful of spinach
Instructions

Heat the olive oil in a skillet over medium heat and cook the onions and garlic until softened.
Add the red pepper with tomatoes and continue cooking for another 5-8 minutes.
Pour in the tomato sauce or passata and the tomato paste. Stir to combine everything together. Cook for a further 1 minutes.
Add the chilli powder, cumin, paprika, salt and pepper and stir.
Crack an egg on top. Place lid on top of skillet and allow egg to cook untouched.
To finish sprinkle with basil and add a handful of spinach.
